I cannot recommend this recipe enough. It is so simple, yet incredibly satisfying. You won’t want to buy pre-made lemonade any more when you can make something so delicious at home. This recipe is from one of my favourite British cooks, Hugh Fearnley-Whittingstall who owns River Cottage.
This drink is absolutely amazing with some gin. I promise you will never look back.
1 cup caster sugar
1 tbsp honey
1 cup water
Zest of 2 lemons
Juice of 2 lemons
900ml cold water
2 large sprigs mint
1. Combine the sugar, honey and a cup of water in a saucepan and bring to the boil. Once boiling, lower the heat and simmer for two minutes.
2. Meanwhile,place the lemon zest and juice into a jug. Pour the mixture into the jug over the lemon juice and zest.
3. Once it has cooled slightly, top up your jug with water. The mixture should be diluted with approximately 900ml of water. Pop in the fresh mint.
Allow to cool in the fridge for at least an hour or so before serving.
